Ingredients:
- 2, 6-8oz Will Cod Filet
- 1 ½” cups of Almond Flour
- 2 T Parsley, finely chopped
- 2 Eggs, lightly hand beaten (or for an egg substitute use 2 T Flaxseeds + 6 T Water)
- 1 T Avocado Oil
Directions:
Rinse off cod filets and pat dry. Add salt and pepper to front and back of filets.
Meanwhile, lightly hand beat the eggs (or for the egg substitute, mix flaxseeds with water, and stir until becomes slightly glutinous, this will be used as an egg to keep “breading” on the fish).
In another large bowl, mix almond flour, parsley, salt and pepper to taste.
Dip each side of the cod filet in the flaxseed mixture, then dip each side in the almond flour mixture.
Add oil to pan, and place on high heat. As the oil begins to warm up, lower to med-high, and add the filets to the pan.
Cook until golden, brown and crispy on one side, then flip cooking until the other side looks the same. The fish should be white and flaky on the inside when finished.
Serve with your favorite vegetables or a large, leafy green salad.
